Ultra Low-Carb Taco Seasoned Beef and Peppers

What you need:

1 lb. grass fed beef
1 red bell pepper
1 tbsp coconut oil
1 pack low carb taco seasoning
1 8oz can sliced black olives
Parmesan cheese to taste 

Utensils needed:

Large skillet or frying pan
Spatula
Cutting board
Knife
Can opener 

Step 1: Brown beef.

Brown the beef in a large skillet over medium high heat. Using a spatula break up the beef into small pieces as it cooks. If you’re using grass fed beef or the fat content is on the higher side you can remove the excess fat by draining it or soaking it up with a few paper towels.

 

 

Step 2: Slice pepper.

Thinly slice the bell pepper. If you prefer to chop it you can do that instead. Red bell peppers give the dish a nice sweet bite, but feel free to use any color you like or a combination of a few.

 

 

Step 3: Add coconut oil.

Reduce the heat to medium and add 1 tablespoon of coconut oil, mixing it in well.

 

 

Step 4: Add taco seasoning.

Add you favorite low carbohydrate taco seasoning and mix it in well. If the beef seems dry you can add 1-2 tablespoons of water.

 

 

 

Step 5: Add peppers.

Add the sliced peppers to the seasoned beef and mix. If you like your peppers aldente then proceed to the next step, otherwise allow them to simmer for 1-2 minutes.

 

 

Step 6: Add olives.

Add the sliced black olives to the skillet and mix.

 

 

 

Step 7: Cover and simmer.

Reduce the heat to medium low and simmer for 2-3 minutes or until heated through. Remove from heat.

 

 

Step 8: Top with cheese and enjoy.

Parmesan cheese is a great addition to this dish, but if you prefer shredded mozzarella or cheddar cheese go for it. Enjoy your delicious Low-Carb Taco Seasoned Beef and Peppers!
