Ultra Low-Carb Italian Stallion Scramble

What you’ll need:

1 tbsp coconut oil
1 oz red onion, diced
½ red bell pepper, chopped
1 Italian sausage, sliced
2 omega-3 enriched eggs
2 oz shredded mozzarella cheese
1 green onion, diced – optional garnish
Salt and pepper to taste

Utensils needed:

Skillet
Cutting board
Knife
Small bowl
Fork or whisk

 

Step 1: Melt coconut oil.

Heat a large skillet on the stove over medium high. Add the coconut oil and swirl it around the pan as it melts.

 

 

Step 2: Sauté onions.

Add the diced onions to the skillet and sauté them for 1-2 minutes or until they start to smell good. Stir them often.

 

 

Step 3: Add peppers.

Add the chopped peppers to the skillet and continue to sauté with the onions for another 2-3 minutes.

 

 

Step 4: Add sausages.

Add the sliced sausages to the skillet and allow them to brown a little. Stir often with the spatula to prevent burning.

 

 

 

Step 5: Whisk egg.

In a small bowl whisk the eggs until they are a little frothy. Add a dash of salt and pepper and mix again. Reduce the heat to the skillet to medium before adding the egg mixture.

 

 

Step 6: Pour egg and scramble.

Slowly pour the egg mixture into the skillet, whisking as you pour. Using the spatula, fold the egg mixture into the peppers and sausages. You don’t need to mix it a lot, just fold the edges in every once in a while until the eggs are cooked through. Remove from heat promptly.

 

 

Step 7: Top with cheese.

You can use whatever cheese you prefer. Simply sprinkle a little, or a lot, on top of the scramble and enjoy! For an extra splash of color and little more fresh flavor garnish the scramble with one diced green onion.
