And today, I wanted to discuss vegetables. People have a lot of questions on how many vegetables you need to eat every day. The answer is actually zero. Although vegetables have a lot of minerals and vitamins that we need, we can get a lot of those from animal foods. And to be honest, I usually have people supplement with a multivitamin. It’s very important. The absorbability is high enough. You don’t need mega-dosages of vitamins. It doesn’t matter how hard you work out.
But that doesn’t mean you can’t eat vegetables. I, myself, I enjoy vegetables. I like cucumbers and tomatoes and winter or summer squash. I also eat pickles from time to time. You know, I don’t really limit myself. Bell peppers are one of my favorites. All kinds of peppers – hot peppers. These are the things that I add into my meals to kind of get a nice variety. But I still take a multivitamin just to make sure that everything’s capped off.
But, you don’t need vegetables. There’s no extreme need for vegetables. I’m not going to say you should never eat them. You may need the fiber content to help things pass through. And the argument that we had to have eaten vegetables when we were cave men is just total bunk. For example, we used to eat the whole animal. Liver is very high in vitamin C. So we could have gotten plenty of liver for vitamin C. And when you don’t eat carbohydrates, you actually don’t need as much vitamin C or vitamin E or all these other things that we’re always concerned about getting in our diet. One reason we get deficient is that carbohydrates absorb or block the absorption and use of these vitamins. And we’re taking carbohydrates out of the diet for most of the day.
So if you forget to put vegetables in, put them at the end of the day if you really want to. Or if you just want some extra flavor or texture – in the first half of the day. Go ahead and add them in. But there is no absolute set quantity high or low vegetables that you need to get every day.
