Ultra Low Carb Valentine Truffles

What you’ll need:

Chocolate Ganache:
3 tablespoons unsalted butter
1/3 cup heavy cream
2/3 cup unsweetened cocoa powder
Stevia – optional

Toppings (about 3 tablespoons of each):
Chopped pecans
Unsweetened coconut flakes
Instant coffee or coffee grounds
Unsweetened Cocoa powder
Bacon bits

Items needed:

Mixing bowl
Microwave
Fork or whisk
Baking sheet
Parchment paper
Spoon
Clean hands
Mini cupcake cups

 

Step 1: Melt butter.

In a medium sized mixing bowl melt the butter in the microwave until melted, but not hot.

 

 

Step 2: Add heavy cream.

Add the heavy cream to the melted butter and lightly mix them together.

 

 

Step 3: Add cocoa powder and mix.

Add the cocoa powder to the butter and cream mixture. Using a fork or whisk carefully mix the ingredients together well. The mixture should become slightly thick. If you want to add Stevia or another sugar-free sweetener do so now.

 

Step 4: Chill in refrigerator.

If the mixture is still warm from the melted butter allow it to cool on the counter. Once cooled, store in the fridge to chill for about 1 hour. The mixture should be thick, but not hard. If it’s too hard to work with, let is sit out as you prepare the next steps.

 

Step 5: Prepare baking sheet.

Line a baking sheet with parchment paper.

 

 

 

Step 6: Prepare toppings.

On a large plate place small piles of your desired toppings, leaving enough between them so you don’t mix the toppings together, unless that’s what you want!

 

 

Step 7: Form balls.

Using a spoon, scoop out about ½ tablespoon of the mixture into the palm of your hand. Roll the mixture between your palms until a ball is formed. Place on the parchment paper and continue with the remaining mixture.

 

Step 8. Coat balls.

Take each ball and carefully roll them in your preferred topping, being careful not to push down too hard on the balls so you don’t smash them.

 

 

Step 9. Presentation.

Place each truffle in a mini cupcake cup. If you don’t have mini cupcake cups, simply place them back on the parchment paper or in a small box.

 

 

Step 10. Share the love!

If you’re going for presentation place these delicious truffles in a cute box, otherwise a simple Tupperware container will do. If you are making these treats in advance simply store them in the refrigerator until you are ready to share!
